Sausage-Apple Stuffed Squash

Ingredients  

  • 2 large acorn squash
  • 1 medium sweet onion
  • 1 honeycrisp apple
  • 1 lb pork sausage
  • 1/2 cup breadcrumps
  • 1/2 cup parmesan cheese
  • 1 dash olive oil
  • 1 dash sage

Instructions 

  • Preheat oven to 350, slice acorn squash in half and remove seeds. Then drizzle the inside of both halves with olive oil ensuring it has a nice coat. Place open side down on a roasting pan and place in oven for 30 minutes.
  • Cook the pork sausage in a cast iron skillet until it done. While sausage is cooking, dice the apple and the onion into desired bite size pieces. Once sausage is done cooking, remove sausage from cast iron and set aside.
  • Add the diced onion into the cast iron skillet, sprinkle with a dash of brown sugar and sauté until just before they are golden brown. Add the diced apples, a dash of cinnamon spice and finish caramelizing the onions and cook the apples.
  • Once the onions and apples are cooked, add the cooked sausage, bread crumbs, and the parmesan cheese. *Leave a little parmesan and bread crumbs to the side to top the squash.
  • Take the squash out of the oven, stuff with the mixed ingredients, and top with the remaining parmesan and bread crumbs. Then bake for another 15 minutes or until the squash is tender to a fork.
  • Plate and seve.
